Five new foods are drawing attention at the 2026 New York State Fair, giving fairgoers a short list to chase through a place where hundreds of vendors can make even a good snack hunt feel overwhelming. Among the options are a deep-fried burger stacked inside grilled cheese, a fried-roll dessert, scratch-made matcha and ube ice cream, and whole grilled squid.
That matters now because people head to the fair looking for something they have not already eaten a dozen times before, and the new items are spread across several stops. James Hasbrouck said he has been attending the New York State Fair for 18 years, and even for him the newer offerings stand out when the fair is packed with choices.
Deep Fried Specialties is bringing back the Defibrillator, which Hasbrouck described as a deep-fried half-pound burger with deep-fried cheddar cheese, deep-fried pickles and deep-fried bacon between two grilled cheese sandwiches. The same vendor also has a deep-fried Biscoff cheesecake topped with cookie butter, whipped cream, a Biscoff cookie and more cookie butter. It is the kind of over-the-top fair food that explains why people keep making room for one more bite.
Fair Deli is offering a sweeter route near the poultry barn. Zach Marji said the item starts with three Hawaiian rolls skewered on a stick, fried, then finished with sweetened condensed milk, cinnamon sugar, pistachio cream, phyllo dough and crushed pistachios. Chocolate Taps, in the Eatery, is serving matcha and ube ice cream made from scratch at the fair, and Marji said the shop believes it is the only one there making those flavors on site.
The new food list is not the same as the total menu at the fair, which is the point and the problem at once: there are hundreds of vendors, but only a few newly highlighted items are being pushed to the front for shoppers who do not have time to wander every aisle. Sherry Lou said Captain Squid, in the Asian Village, is serving whole grilled squid inspired by Asian street food, another option for visitors who want something different from the usual fair standbys.
Fairgoers who want to build a route around the new items can still do it without guessing. Deep Fried Specialties, Fair Deli, Chocolate Taps and Captain Squid all give the 2026 New York State Fair a tighter food map than the full crowd of vendors does, and the clearest takeaway is simple: the new things to try are already on the grounds, waiting for anyone willing to look for them.
