Diego Galicia is opening Filleman House this fall in the former home of Restaurant Claudine at 517 E. Grayson St., giving Pearl in San Antonio a new neighborhood restaurant with a more brasserie-style identity. The project is a solo move for the Mixtli cofounder, and it puts him in a space that has been empty since Restaurant Claudine left.

Filleman House is meant to serve prime rib, steak au poivre, a dry-aged burger paired with a martini at the bar and oysters in the garden, while Lauren Beckman, who received the 2024 Michelin Guide Texas Service Award, will lead the beverage program. Galicia said Filleman House is the restaurant he has always wanted to create. After years of telling the stories of Mexico through Mixtli, he said he wanted to build something that reflects another part of who he is, not just as a chef, but as a diner. He added that it is the kind of place he wants to eat in every day.
The menu makes the shift plain. Mixtli is known for Mexican fare, but Filleman House is moving in a different direction, with brasserie dishes that lean into steakhouse comfort and a barroom rhythm. The restaurant is named for the historic bungalow’s original owner, August Filleman, which gives the project a direct tie to the building it will occupy.
One detail remains unsettled: Filleman House is being described as opening this fall, but no opening date has been set yet. OpenTable reservations are expected to open soon, which suggests the launch is getting closer even if the calendar is still open.
The timing also lands alongside another change in the city’s dining scene. Rico Torres has announced a July opening for Rosso as part of La Unión Hospitality, while Zorbas Greek Mediterranean Cuisine has closed at 2110 NW Military Hwy in Castle Hills after almost two decades. For now, Filleman House is the clearest near-term addition near Pearl, but the exact day guests will be able to walk in still has not been pinned down.
