The Minnesota State Fair is adding 36 new food and drink options and nine new vendors for 2026, a lineup that gives fairgoers fresh reasons to plan ahead before the gates open on Aug. 27.

Among the new offerings are Pickle Pie at LuLu’s Public House, Surf ‘N’ Turf Burger at Cafe Caribe and Hmong Corndog at Union Hmong Kitchen. Dockside Poppers at Summer Lakes Boat House is set to open in a brand-new building with live entertainment every day, turning one of the new vendor additions into more than a menu change.

The fair opens Aug. 27 and runs through Sept. 7, which is why the new-food announcement lands now. With the event less than a month away, the newest items are moving into the short window when fairgoers are deciding what to try first and what to save for another day.

That timing matters because some of the new items will not be available for the full run of the fair. Jamaican Jerk Chicken Loaded Fries will be sold from Aug. 27 to Sept. 1, while Midtown Global Market’s El Taco Torro is scheduled for Sept. 2 through Sept. 7. The split schedule means the 36-item list is not one menu but several overlapping runs, and anyone hoping to sample the full crop will need to pay close attention to the calendar.

For the Minnesota State Fair, the new lineup is part of the annual buildup to opening day, but for visitors it also creates a simple test: show up early enough, and some dishes will still be on the board. Wait too long, and a few of the most talked-about items will already be gone.
